Imagine cutting into a little chocolate cake and watching warm chocolate flow from its center. Chocolate lava cake is a delightful dessert with a delicate outer layer and a soft, melted middle.
Although it looks elegant, we can make it at home with simple ingredients and easy baking techniques. The key is controlling the oven time so the outside becomes firm while the center stays soft.

Prep and Bake Time

Preparation takes about 15 minutes, followed by approximately 12 minutes of baking and 5 minutes of resting. You will need four 6-ounce oven-safe ramekins, a microwave-safe bowl, a second mixing bowl, a whisk, a spatula, a baking tray, and a wire rack.

Ingredients

The ingredients fall into three groups: the ramekin coating, the chocolate batter and the optional toppings. For preparing the ramekins, you will need:
- 1 tablespoon softened butter
- 4 teaspoons granulated sugar
For the chocolate batter, you will need:
- 1/2 cup (113 g) unsalted butter, cubed
- 4 oz (113 g) semi-sweet chocolate, chopped
- 1 cup (120 g) confectioners' sugar
- 2 large eggs, room temperature
- 2 large egg yolks, room temperature
- 1 1/2 teaspoons instant coffee granules
- 3/4 teaspoon vanilla extract
- 6 tablespoons (45 g) all-purpose flour
- 1/2 teaspoon salt
Optional toppings include:
- 1/4 cup whipped cream
- 1 tablespoon confectioners' sugar
- Fresh strawberries or raspberries
This makes four individual cakes.

Step 1: Prepare the Ramekins

Preheat the oven to 400°F (200°C). Grease four 6-ounce ramekins with softened butter, covering the bottoms and inside walls. Add 1 teaspoon of granulated sugar to each ramekin and rotate gently to coat the surfaces, then tip out the excess. Arrange the ramekins on a baking tray.

Step 2: Melt the Chocolate and Butter

Place the cubed butter and chopped chocolate in a microwave-safe bowl. Heat for 20 seconds at a time, stirring after each interval, until everything melts into a smooth, glossy mixture. Stir in the confectioners' sugar until evenly combined, then let the mixture cool slightly for 2 to 3 minutes.

Step 3: Add Eggs and Flavorings

In a separate bowl, lightly whisk the 2 whole eggs and 2 egg yolks. Pour them slowly into the chocolate mixture while stirring continuously. Add the instant coffee granules and vanilla extract and mix until the batter looks smooth. The coffee brings out the chocolate flavor, while the extra yolks create a richer texture.

Step 4: Finish the Batter

Measure the flour and salt, then add them to the chocolate mixture in two portions. Fold everything together gently with a spatula, scraping the bottom and sides of the bowl to incorporate any remaining flour. Stop mixing once no dry flour remains. The finished batter should look thick, smooth, and glossy.

Step 5: Fill and Bake

Divide the batter evenly among the four prepared ramekins, filling each to a similar level and leaving a little space at the top. Place the tray on the middle oven rack and bake for approximately 12 minutes.
The edges should look firm, while the centers should remain soft. Watch carefully near the end, because even a little extra baking time can make the middle firmer.

Step 6: Rest and Release

Remove the tray from the oven using oven mitts. Place the ramekins on a wire rack and let them rest for 5 minutes.
Run a thin spatula around the inside edges. Cover each ramekin with a serving plate, carefully turn it upside down, and slowly lift the ramekin away. Repeat with the remaining cakes.

Step 7: Decorate and Serve

Serve the cakes while warm. Dust each one with confectioners' sugar and add a spoonful of whipped cream if desired. Arrange a few fresh strawberries or raspberries beside each cake for a fruity contrast to the rich chocolate flavor.
Serve the cakes as soon as they are turned out, while the centers are still soft and molten. Lykkers, would you choose fresh berries or whipped cream as your favorite topping?
